Danish Aebleskiver

Aebleskiver are traditional pancakes in the distinctive shape of a sphere, and are solid like a pancake, but light and fluffy like a popover.  They are cooked in a special, traditional stove-top baking pan with hemispherical indentations.  Instructor LindaDee will be bringing her family’s heritage cast iron pan, cherished aebleskiver recipe, and special technique for turning the sphere so that all sides may bake properly.  After cooking together, students can expect to sit down to eat their newly created aebleskiver – with butter, maple syrup, yogurt or cottage cheese, applesauce, and fruit – all provided by Linda ,and to go home with a recipe and the skills to be able to recreate these treats at home.

LindaDee Derrickson holds a UW-Madison teaching degree in Home Economics, with food and fiber being life long passions.  She teaches all ages at Grandview Folk Museum, Monroe Art Center, Shake Rag Alley, local schools and her home. LindaDee is active in the “Soil Sisters” of Southern Wisconsin and Sarasponda Spinning Guild. Like her Viking ancestors, she has traveled throughout Scandinavia and to many countries, including Russia, Morocco, Columbia, Ecuador, Peru, and the Caribbean islands where she served in the Peace Corps. She tends a large garden and a diverse flock of endangered heritage sheep on her organic farm between New Glarus and Monticello in Green County.
