In the past, the beneficial effects of fermented foods on health were unknown, and so people primarily used fermentation to preserve foods, enhance shelf life, and improve flavor. Fermented foods have recently been associated with many health benefits, such as anti-oxidant, anti-microbial, anti-fungal, anti-inflammatory, anti-diabetic and anti-atherosclerotic activity.

In this class, students will receive instruction on how to brew Kombucha, Kefir Water and Milk, Ginger Beer, and Turmeric Soda.  Each will be demonstrated by the instructor, and supplies will be available for purchase so that students can embark upon their own fermentation adventures at home.

Students need to bring the following supplies:

Bring a notebook and pen/pencil for taking notes during the demonstrations.

Optional materials fee: (To be collected directly from students by instructor in class): 

  • Complete Kombucha kits:  Gallon jar, cloth, SCOBY (symbiotic culture of bacteria and yeast), sugar, tea, and instructions. Everything to start the first batch – $30

Individual starter cultures (1 cup of starter in a small mason jar)

  • Turmeric bug – $10
  • Kefir Grains – $10
  • Ginger Bug – $10

Vanessa Tortolano is a  a master fermentation brewer. She founded and operated NessAlla Kombucha for 13 years in Madison, Wisconsin. She has been brewing fermented beverages for over 15 years, and is continually fascinated by the wonder and joy of fermented products, and how easy they are to make at home to bring better health to our bodies. Vanessa loves to produce a fun and creative learning environment.
